Surf & Turf Ravioli

One day while I was doing some work at the bar, Chef Michael brought out this freshly inspired beauty of a ravioli dish.  As the family’s official taste tester, I had the honor of savoring its mix of tenderloin with fresh seafood (in this case, lobster) in a devilish cream sauce for the first time while Chef was ‘working out the kinks.’  It…is…amazing; simply one of the best things available when Chef puts it on special.

The official version, seen above, comes with a generous serving of fresh seafood (clams, mussels, schrimp are typical).  However, I think one of the most special part of this dish is the way Chef Michael finishes off the pasta by leaving portions of the top crisped over with cheese which gives an amazing textural contrast.  It certainly is a meal worthy for a celebration.
